I use Citadel paints for human skin. Specifically Citadel contrast paint. Flesh is very difficult to look good but it really depends on the scale. For larger scales, you'll want to layer with highlights.

I use a black fabric backdrop to get the black background. I also play around with the lighting (I use two lamps) to try and make sure the fabric doesn't get too exposed and visible. Then when I am editing the photos I tend to up the contrast a little bit until it's black.
