Finally caught up on Super since next week I can start watching the show legally and I know this arc isn't done yet, but my god, this may be one of the best arcs ever in the Dragon Ball series. It is far more complex and thoughtout than I was expecting from Dragon Ball in this day and age. That means there is also a timeline where the Earth stayed destroyed by Freeza's blast when he went up against Vegeta, HOLY ****!!! I'm super excited to see where this arc goes. Ha, get it, "super" exicited? I made a funny. :-)

After years, I'll finally try to finish the original DB, but when going to Z, I'm conflicted. Z or Kai? I heard that Kai's got pacing MUCH better, though I also heard how it 'stripped the soul of Z' despite how I'm certain that's nostalgia goggles

Kai is better than DBZ in my opinion due to better placing seeing there is not much filler. Most of the filler in DBZ didn't add much to the plot in my opinion. Not to mention the English dub for Kai is the best English dub for DBZ in my opinion. You can watch it Uncut on DVD, Blu-Ray and Toonami.
I find the old dubs from Funimation for DBZ to be pretty terrible in my opinion. They have bad voice acting, corny dialogue and bad dub errors in my opinion. |

Yeah, go with Kai, at least as far as you can. Then jump to episode 200 of regaular Z and watch the Boo saga. Then stop at I want to say episode 287 (maybe 288) and watch Battle of Gods, Resurrection F, and then Super from episode 28 onward.

Buu saga Kai is already done in Japanese, but the English dub may be airing soon on Toonami.

The Funimation dub of the first Dragon Ball show from 2001-2003 is decent, but far from great. If you only like Dragon Ball in English, I suggest to watch DB and Kai dubbed. If you don't care about subs, you can still watch both DB and Kai subbed.
For GT, you can take it or leave it. I do suggest to watch GT subbed because I found the voice acting and dialogue in the Funimation GT dub to be awful. Not to mention the music replacement from Mark Menza is pretty bad too. From what I've seen, The Blue Water dub of GT is better with the Japanese music, better voice acting and the dub scripts look more faithful too.
