Is it just me or is Pinkie like the easiest to have in character while writing Fanfiction.

Yeah, that's many because her character primarily consists of "random, weird and a touch insane" and not much of anything else. So yeah, she's very very easy to write for. Probably one of the easiest characters in existence.
