From a character standpoint, I think she's fairly solid. The Nightmare force takes a character's insecurities and amplifies them, giving her power and keeps the possessed pony in a constant nightmare state. It's fairly interesting and makes what happened to Luna a lot more interesting. As a character herself, Nightmare Rarity is pretty cool. She's a pretty fun mix of Nightmare Moon and Rarity.

As to how they handle it...if you read fanfiction, then you'll get a non-cannon explanation. (The explanation from the fanfic I read, which was about Kaji Tastumi from Persona 4 finding his way into Equestria...explained it when he was eating with the Mane 6 and the Princesses in Canterlot Castle, and he asked "So...where's the meat" and I believe Twilight got upset that he would assume that there would be meat, and Celestia explained to him that preparing meat would make their cooks very uncomfortable, and that they just don't eat meat.)

Except they can't just "Look" like fish. Ferrets aren't omnivores, they're obligate carnivores. She had to feed them real fish.
Feeding them fish that died of an unknown cause would be rather dangerous of Fluttershy to do.

That's...that's actually a really good point. Unless, she bought them from a fisherman (er, pony).

If humans can make tofu chicken that looks like chicken, I see no reason why magical, anthropomorphic ponies can make a fish substitute that looks like fish, tastes like fish, provides the same nutrients as fish, but is not fish.

Either that or somepony else gave Fluttershy the fish.

I'm just sitting here looking at the Harmoranger suits and i'm thinking, "You know maybe i should give writing a Sentai story a try." The major flaw in this is that i don't know how to write Fight scenes very well.

And the only plot ideas i have are that it takes place in an Equestria girls like universe where the 5 rangers are high School students, the only difference being that Twilight isn't a student there, another plot being that they use gem stones shaped like cutie marks to charge theyre weapons like the beast batteries of Kyoryuger.

Because ferrets can't digest anything but meat.
That's the difference between a carnivore (Who can eat fruits and plants, but primarily eat meat) and an obligate carnivore (Who physically can't eat anything but meat).
