Really hard to say. It's one of those times when you know you've watched a ton of cartoons, but none come to mind when asked. I'll give it a try:
My Little Pony: Friendship is Magic
- Best animated show in my book. Shared so many memories and fun with this show.
Beast Wars: Transformers
- Show that introduced me to Transformers and shaped my Transformers fandom ever since.
Justice League/Unlimited
- Show that introduced me to the appeal of superheroes and solidified them, especially with Batman. Showed me how superheroes were like modern myths.
Star Wars: The Clone Wars
- Takes the movies' potential and expands it with jaw-dropping space and land battles, awesome saber duels, and genuinely interesting characters.
Avatar: The Last Airbender
- Made me believe that a Western cartoon could tell an epic, self-contained fantasy full of beauty and richness.
Teen Titans
- Wacky, zany, fun, yet serious when it needed to be, showed me not to judge a show by its cover.
Transformers Animated
- See what I said about Teen Titans. Remains the single best reinterpretation of the Transformers mythos and has the most fully living, breathing world of all the series.
Dexter's Laboratory
- Had tons of fun with this as a kid.
Tom and Jerry
- Same as Dexter, spent hours rewatching these.
DuckTales
- Who knew the adventures of an old money-faced duck and his three kid nephews could be so epic?
Honorable mentions:
The rest of the DCAU, Kim Possible, Reboot, Looney Tunes, Darkwing Duck, Chip n' Dale Rescue Rangers, Avengers: Earth's Mightiest Heroes, Avatar: The Legend of Korra, Totally Spies, The Powerpuff Girls, all Hanna-Barbera cartoons and Men in Black: The Animated Series.
