I'd say Uncharted 2, though that's just because it has the largest variety of set peices IMO; the first game is mostly set in coloniel ruins on a South American island, and the third one has is lot of desert (along with generic rainy London pubs in the beginning and a French Chateau after that, but it's more deserts).

Uncharted 2 has jungle, a Nepalese city and snowy mountains.
