Do you not watch Game of Thrones? It is the same thing. The show will be back to tell more of the story, what difference does it make if it helps keep the show at a decent length?
Attack on Titan is based on a manga. Do you dislike Fairy Tale because they took a long break so they wouldn't have to create their own filler garbage? Series based on mangas have three fates these days. The first is to give the show so much filler than it completely ruins the enjoyment of the show like Bleach and Naruto. The second is to write up a bullshit ending that makes it pointless to have ever done the series like Claymore, Blue Exorcist, Ouran Host Club, etc. The third is to break the series up into arcs and tell the anime as they can to keep it true to the source material. It isn't rocket science, as the later is the better option. Would you rather they waited until the entire manga was done in five years time, then animate the whole thing under a rushed schedule, which causes the animation quality to take a dip? Not to mention adapting the series when it has lost its momentum?
Now I will agree that the pacing is off in the anime, but even the first volume was pretty slow moving. Everything gets moving in the second volume, which is the start of episode six of the anime. And then from Volume 4 on the manga is just down right incredible. It is full of suspense, horror, mystery, and action.
