Except Kaito's entire philosophy and style is built around attacking with overwhelming brute force almost as much as honor. He has no real reason to hold back from breaking out Lemon Arms at the first sign of trouble, especially considering that the only legitimate threats to him (Kouta, Micchy and the rest of the Next Generation Riders, and the Overlords) would require it so he can keep up the pace- and most of them are in the forest with him.

Considering the amount of time he's spent in Helheim and that the speculation about the Genesis Driver's shortcomings are true, he was likely keeping his old Banana Arms primed because he a) didn't know how long he'd be out in the forest, and b) didn't want to be caught off-guard by any Inves or Riders. There isn't a lot of downtime between switching Drivers for him, so he could easily slip into Lemon Energy whenever he decided it was necessary, then revert right back to Banana afterward.

Kaito maybe be straightforward, but he's not stupid.
