Because I'm sure there's more to that then the Cafe owner is letting on. You have to admit he's a suspicious guy. The panel looks like the same sort of Martian(?) technology Pandora's Box itself is made out of, so it's definitely more than just a way to test bottles. Who knows what's hidden behind that wall?
