Well the amazons we see in the show (with the exception of Jin, a certain character that will be explained later, and a few characters introduced in season 2) aren't human, they're creatures made from scratch in a lab that can just mimic humans. Also all the amazons are capable of transforming whenever they want, all the armlet does is keep their cannibalistic urges in check.
