It's a factor of two things. First is that he's a showman. Open hands in order to show you're not hiding anything. When it comes to sleight of hand tricks, part of a good palming technique is to rarely have your hand clenched into a fist. Otherwise, it's a dead giveaway that you're hiding something.

Second, I don't think they wanted to make 10 rings per fight scene since I'm sure a punch would probably break them
