No, you CAN'T buy one of each. You can only buy 1 out of 5. Period. It's the bit I quoted from the order page. So they won't sell any more than they would normally.

And canceling a preorder at AmiAmi is iffy. If you do it long before the item comes out, they may not care. Though they may give you a hard time(you have to email them and ask them to cancel it, you can't do it yourself). You basically have to ask really nicely, with a lot of Japanese style self-effacement.
