Because the industry is WAY BIGGER THAN IT WAS 30+ YEARS AGO. Anime studios deal with a handful of productions every season now, let alone every year. Unless a studio is big enough to dedicate most of their time to one longer-running series at a time, like Toei, Sunrise or Kyoto Animation, then they need to plan around stuff. And even THEN larger studios can still split cours up for time. If a series can easily run two cours and you have other projects needing preparation, do one now and then have the second half under prep for a later season.

You do realize a good chunk anime, especially now, are based on manga and light novels. Even then, them being given breaks is fine as long as it avoids filler when other shows shouldn't, even if it might mean filler episodes to give time for story development?
On top of that this is no different from how TV here works. Seasons end with questions still unanswered, the next season comes out later on in the year. It's not like current Power Rangers where the season's cut off at a point that makes no sense. They end a half-season somewhere that either closes that main storyline and teases the next or leaves a cliffhanger of some sort to guarantee you'll be back for the next part. It's not the show's fault, if anything I think you're just really impatient.
