Don't get me wrong, if they're great actors who happen to just not get many gigs, then awesome. I'm all for it. I'm just hesitant since I don't know their acting chops, so I can't prematurely judge them

It's up to the director to build those relationships. The Star Trek movies did very well considering the 5 or so hours of total running time they've had between the two movies. Can't comment on the Fantastic Four since I've not seen it, but I haven't heard good things about it.

The director has to focus on the limitations of the cinema running time and work around that. It could work well (like in the original Star Wars film) if he knows what he's doing.
