He killed the Riders that made the contract and then made new contracts with their mirror monsters. Which isn't impossible, the show explains (if I remember correctly) that you can have as many mirror monsters under contract as you want, you just have to feed them all, and no sane person would contract more than one since it would amp up the risk of one of them being hungry enough to eat you significantly.

But as we all know, Asakura is no sane person.

And I'm pretty sure there are multiple scenes later on where his three monsters are about to eat him up.
