I'm guessing it's probably because his role model, Kyutaro, is a surgeon. I'm guessing it also ties into the whole "changing the patient's fate with my own hands" thing and the fact that he's already been doing "operations" as a Rider. He probably wants to be able to help patients directly when he can.
