Thinking about it, I'm kinda disappointed that we never got to see Katsuragi's mom again.
She had a really nice moment with Sento around the time everyone got Sento was Katsuragi with the omelette roll and then in the café. It would have been nice to see her again at some point (during the dad arc or even the epilogue).

I agree but this isn't the show's fault, apparently the poor actress had to get cancer treatment
