I know how you feel. Writing fight scenes often stumps me as well and it must be difficult trying to balance 12 rangers and the villains effectively. I may have a few ideas though.

For the first fight, maybe you could consider what would be the most unpredictable tactics based on the rangers' usual fighting styles. For example, Pink is a speed type ranger so she could use the axe configuration.

For the second fight, since Gold and Red/Green are present, you could have one of the latter use Sun Mode to change Gold's fighting style. Maybe think of a good reason for the villain to leave in the middle of a fight.
