I'm not a big anime guy nor am I a big cartoon connoisseur compared to a lot of people, so these might be like the most obvious and seen picks. But like when it comes to Mecha related stuff I've gotta always shout out:

Megas XLR
and
Big O

Honorable Mention goes to Brave Exkaiser, the first and father of the Brave Series which you might know better as the one which brought out GaoGaiGar. And also a franchise of what Trigger likes to reference quite a bit when it comes to Gridman Universe. It's not like, the most amazing show, it's a very simple premise, and very transformers-like, but it's a real fun show and I absolutely love it's opening.

Also I will take the time to always go for the meme and say Watch Senki Zesshou Symphogear.

It's like, mecha, magical girl, and toku all combined into one package. It ain't perfect, but it's very enjoyable, at least it was for me.

This is my contribution, not much, because there's already a lot of good suggestions honestly. And like I said, I don't watch anime that much. Heck I've tried to do a Brave Series Marathon and rewatch Bleach only to just not be able to do so. Granted I think that's just me wanting to write consuming my life, but yeah. This is all I've got.
