The dark rider be someone who's like Akuma & Kazuya. The father the protagonist didn't know about from his mother, who lied about his father's "death" to protect him from the truth, fearing he'll end up following his father's path to destruction.

Inspiring by anime Majin Bone, what animals/mythical creatures would suit the riders based on their fighting styles/martial arts abilities?

MMA Fighter should probably be Tiger, especially for a Muay Thai-themed rider, it seems perfect for me.

Star Wrestler should be bear, the word Star Wrestler makes me think of Zangief from the Street Fighter series and he is Russian. Russians are known for wrestling bears.
Kung Fu Fighter/Cop idk
Capoeira Fighter/Dancer should be snake, because they are very agile, idk
