As somebody who also works in video, there's an insane amount of work that goes into making sure the framing of shots looks good. To be honest, I think it's a bit dismissive to just write it off as something that most people won't care about. Sure, a lot don't, but I think it makes sense to give us the original - the people who do care will be happy, and the people who don't care about losing part of the frame likely also won't care about having the black bars. If they do, their TV probably has an option to zoom the image in a bit.
