1) Probably what struck me most of all was that the rumors about the rider-cook came true to some extent. Hotaro helps his mom at the restaurant and has a talent for cooking (and therefore alchemy).

That's a cool detail, how Houtarou already has the passion for experimentation with different ingredients. Alchemy must be his true calling in life.
