So what exactly is the folded-up fruit thing supposed to be?

Not supposed to be anything. It's samurai armor. Just like Kachidoki Arms will be like Shogun general type armor. They're progressively discarding the fruit elements as Gaim evolves into a "real" hero as Urobutchi puts it.

Kachidoki still looks a bit like an orange, though. Being orange, folding into a ball, and having the green stem nub.

I'll give it to you that it's both orange and a ball, but leathery armored ball with flags doesn't necessarily scream fruit to me
