Well I guess any thing is possible when it comes to purging logs but that would not be the norm for any large public website as these logs are a tremendous resource for protecting your servers from various attacks like ddos sql injection ,xss, ect ect, and then from a marketing point of view its also valuable information. And the IP address is what makes this information valuable for in not to be recorded in the server access log would border on criminal.
