I love Great Go-Buster's spear. What I don't really understand is why it has Go-BusterOh's head hanging from it like some sort of trophy

More like when was the last time a Voltron-Oh actually had something that wasn't a sword. That's a boon in Great Go-Buster's favor IMO.
