This is the first time i've trained my in game team to level 100. Then again that mean jack when online matches put them at level 50.

Does anyone know what the deal is with that? Always found it curious....

Like, if my pokemon is at lvl100 it's EV's will have properly filled out its stats. So does the cap just half everything? Or does it reset them to what they would have been at 50?

I believe the latter is right. Your stats would have been what it would have been at Lvl 50 with those EVs. They don't just get capped by half, it's more complicated than that.
