My problem is if they don't remake the original series, then this Origin thing makes no sense due to all of the retcons it is making.

Oh yes. Thunderbolt has been excellent so I'd love to see Blue Destiny given the love it deserves. I wish more side stories like it could be focused on for animation. Off the top of my head I'd love to see:

0079 Rise From The Ashes
Crossbone
Gundam F90
Ecole du Ciel
MSV-R

And that's just to name the big ones that come to mind for me.

You know what would be an interesting concept for a series? A sort of Man in the High Castle alternate history take on the One Year War where Zeon wins. I think it would be really cool to see how Zeon technology progresses with the funding of something the size of the federation. And how the Zabis would rule over Earth after the whole fiasco.

Actually there's a game that covers that already. Look up Gihren's Ambition/Gihren's greed.

IBO in English will primiere next week on adult swim. Not sure if I'll be watching it, as I'm already watching a Gundam show I've already seen repackaged, aka Unicorn Re0096.
