Her simply dying is not interesting. Avatar has shown that it can handle death as Matrix and I have pointed out in just a few examples. What makes it more interesting is why she chose to disappear. Think about it, if she was murdered, the story is straightforward enough. Ozai is evil, and she was good and Zuko should have revenge. But she ran, implying she had something to do with the plot, that there was more than meets the eye.
That is also why she was a more interesting character than Warren McGinnis. I am not saying this was the only way they could have done the story, I am merely saying that explicit death is not the only plot-line a show can use.

I can only remember Devil Ray, and his death was silhouetted out.
Solomon Grundy died and that was pretty significant. Most other deaths, if they were for significant characters, left clear room for return.
