I thought Aang and Katara made more sense. I could see Zuko and Katara getting together, but I think Katara is better off with Aang. Toph seems more like the kind of person to get into a not-married-but-still-have-a-child type of relationship.

I was just never a fan of that "She hates his guts! That must mean she secretly has feelings for him" thing every bad story teller pulls.
