Some pachinko machines have videos that play on a screen but yeah, entire stories and Pachinko only CGI scenes are created for it. The Garo pachinko game is pretty sweet because at times a physical Garo mask will pop up from the sides of the screen.

No he/she was originally from the novel Yoseki no wana which featured the previous Sabakku. He doesn't transform into a female knight, Akira actually has a female form called Misaki like DrillBit said. It's kinda like Ranma 1/2, if you ever watch that. Akira's madogu partner Giruba, even calls him Akira after transforming, so yeah, I don't think Akira transforms into Misaki while in the armor.
